Sophie Fisher on Instagram: "Crispy red curry chicken bites - they’re basically little rice paper dumplings, cooked in the air fryer until crispy Ingredients 500g chicken mince 2 tbsp red curry paste 1 tbsp soy sauce 1 tbsp honey 1/2 lime, juiced 1/2 tbsp grated ginger 1 garlic clove, grated 2 tbsp chives, finely chopped 8 rice paper wrappers Oil spray Dipping Sauce 1/3 cup Kewpie mayonnaise 1 tbsp red curry paste 1 tbsp lime juice 1 tsp honey 1 tsp soy sauce 1 tsp rice wine vinegar To Serve Chopped coriander Chilli crisp 1. In a bowl, combine the chicken mince, red curry paste, soy sauce, honey, lime juice, ginger, garlic, chives until well mixed. 2. Fill a shallow bowl with warm water. Dip one rice paper wrapper into the water until just softened. 3. Spoon a log of the chicken mixture along the bottom third of the wrapper. Fold in the sides and roll tightly into a sausage shape. 4. Using kitchen scissors, snip the roll into bite-sized pieces. 5. Arrange the pieces in a single layer in an air fryer basket. Spray generously with oil and air fry at 200°C for 12–15 minutes, turning halfway, until the chicken is cooked through and the rice paper is golden and crispy. 6. Meanwhile, whisk together the Kewpie mayonnaise, red curry paste, lime juice, honey, soy sauce and rice wine vinegar until smooth. 7. Top the crispy chicken bites with chopped coriander and chilli crisp, then serve with the dipping sauce."

Add to saucepan and bring to a gentle simmer for 10 minutes. Eliya Hachem on Instagram: "High Protein Bowls Episode 1: Sticky Miso Chicken Brothy rice bowls 555 cals • 47g protein Recipe (serves 2- double if you want to make more serves): Sticky Miso Chicken: - 300g chicken thigh, raw - 1/2 tsp minced garlic - 1 heaped tsp chilli paste - 1/2 tsp minced ginger - 1/2 tbsp dark soy sauce (or normal soy) - 1/2 tbsp/12g miso bone broth (optional) - I use @bestofthebone - 1 tsp/10g miso paste (red or white will work) - 1 tbsp liquid sweetener of choice- I use liquid allulose but can use honey - 1/2 lemon, juiced 1. Mix well and let marinate while you prep all other components. 2. When ready to cook, airfry at 185c for 20-22 mins flipping halfway or pan fry until cooked through Rice: - 120g white rice (about 1 cup) - 1.5 cups water - 1/2 tbsp bone broth paste (optional) can sub for chicken stock paste or powder for extra flavour 1. cook rice in a rice cooker or any preferred way Broth: - 1 tsp sesame oil - 1 tsp minced garlic - 1 tsp chilli paste (optional) - 1/2 tsp ginger paste - 1 tbsp low sodium soy sauce - 1/2 - 1 tbsp sweetener of choice - I use monkfruit - 500ml chicken stock + 100ml water - 1 tbsp miso paste (red or white will work- about 20g) - 1-2 heaped tbsp plain bone broth paste to make it creamy (optional) - I use @bestofthebone - Veggies of choice- I use broccolini 1. Add sesame oil to a pan or medium-low heat, add aromatics, soy sauce and sweetener and sautee 2. Add chicken stock + bone broth paste and bring to a gentle simmer, then add miso paste, I like to push it through a mesh sieve so there are no clumps. Simmer for an about 5-10 mins. 3. Add your veggies in the last 1-2 mins to cook slightly. Mix all of the sauce, ingredients, and blend together 2. Season your salmon 3. In a pan at a tablespoon of olive oil oil and cook the salmon about 2 to 3 minutes on each side. It will continue cooking in the sauce . Remove to a plate. 4. Add your choice of 2 cups cooked rice, add your choice of vegetables I used broccolini. 5. Pour the Thai curry sauce over the rice and vegetable (reserving 1/2 cup to pour over salmon )vegetables. Layer with the salmon.
